Tom Cat Gin. First created to serve at the tasting australia origins dinner in 2014, kis old tom has gone on to be a champion gin around the world. The name old tom gin purportedly came from wooden plaques shaped like a black cat.
Or even just a meandering conversation. It is a quintessential english gin infused with six botanicals which can be complemented with a premium tonic, ice, orange peel and a sprig of rosemary or simply just on the rocks. In modern times, it became rare but has experienced a resurgence in the craft cocktail movement.
We use six botanicals and sussex mineral water to make our gin.
Honey is incredibly expensive to harvest, hardie notes, and harder. Our dry sussex gin is based on a classic premium london dry gin style. To make tom cat gin, the distillery takes their original barr hill gin and ages it for 4 to 6 months in american oak barrels. The prevailing theory, however, is that old tom gin got its name from the wooden plaques shaped like “old tom” black cats that adorned the outside wall of pubs in 18th century england.
